Hello everybody,
today I wanna show you my recipe for vegetarian stuffed cabbage. That's probably not the right recipe if you are in a hurry but if you have enough time to cook (maybe on the weekend ;) ) you should try it. It tastes really good and I believe it's also kind of healthy... :)
What you'll need (for 10 pieces)
- 10 big cabbage leaves
- 1 spring onion
- 1 big carrot
- about 120 g mushrooms
- 500 ml vegetable stock
- about 110 g rice
- 4 tablespoons red lentils
- 1 teaspoon marjoram
- salt
- pepper
- olive oil
- 100 g soft cheese
If you use brown rice (like I did) you should pre-cook it for about 30 minutes. Otherwise you can simply put the raw (white) rice to the vegetables later on. In any case, you'll have to blanch the cabbage leaves in boiling saltwater until they wilt. Keep the cabbage stock and cut the vegetables into small pieces.
Heat up the oil and roast the spring onions, the carrot and the mushrooms for about 5 minutes. Then add the vegetable stock. Add the rice, the lentils, the herbs and salt and pepper. Cook it up, cover the pot and let it simmer for about 15 minutes. Remove from the stove and stir in the cheese.
Preheat your oven to 190°C.
Now it's time to fill your cabbage leaves with the rice-vegetables-mixture. Roll them up and put them into a small roasting dish. Pour the cabbage stock over the stuffed cabbage leaves and cover the whole roasting dish with a piece of wetted baking paper. Put the stuffed cabbage into the oven for 30 to 45 minutes.
Take the stuffed cabbage out and enjoy! If you want you can also pour some lemon juice over the cabbage. Yummy!
